How to Make Mutton Sookha

  • In a pressure cooker, heat oil and add the pounded garam masala with tejpatta. Fry for a minute.
  • Add onions, curry leaves and fry for some more time till the onion starts turning brown.
  • Add ginger-garlic and fry till it turns golden brown.
  • Add grated coconut and fry for 3 mins.
  • Add ground dry masala powder and fry for 5 mins till it exudes a good aroma.
  • Add tomatoes and fry. Add salt.
  • Add mutton pieces and fry till the mutton pieces leave water.
  • Add vinegar.
  • Add half a cup of water or less so that it just forms a thick gravy.
  • Cover and cook for 15 mins in the cooker.
  • If you are not using a cooker, use a heavy-bottom vessel with a tight lid and stir occasionally. Cook till the meat pieces are tender.
  • Garnish with coriander leaves and serve hot with neer dosa, rotis or rice.
