Ingredients

  • Mutton - 500 g
  • Onion - 1/2 cup, chopped
  • Ginger - 2 cm piece
  • Garlic - 4 flakes
  • Mustard oil - 2 tbsp
  • Vegetable oil - 2 tbsp
  • Chilli powder - 2 tsp
  • Cumin powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Coconut milk - 2 cups
  • Salt to taste
  • Bamboo shoots - 1 cup, sliced
  • Capsicum - 2, cut into quarters
  • Shallots (sambar onion) - 4-6
  • Garam masala - 1/2 tsp
  • Coriander leaves - 2 tbsp, chopped
  • Green chilli - 2 tsp, minced

How to Make Mutton with Bamboo Shoots

  • Cut the mutton into bite-size pieces.
  • Grind the onion, ginger and garlic into a paste.
  • Heat both the oils together in a pressure pan.
  • Add the paste and fry well.
  • Add the mutton and chillies, turmeric and cumin powders.
  • Fry until the mutton is brown. Add coconut milk and salt.
  • Pressure-cook for 8 mins.
  • Cool the cooker and check the mutton (it will be half cooked).
  • Add all the vegetables. Simmer until the mutton and vegetables are cooked and almost dry.
  • Add garam masala.
  • Transfer to a serving dish and sprinkle coriander leaves and green chillies.
