Ingredients

  • 500 g - mutton, cut into serving portions
  • 250 g - sour curds
  • 1" piece - ginger
  • 6 flakes - garlic
  • 2 - big onions
  • 1 tsp - each of ground cumin seeds, garam masala, coriander and turmeric powder
  • a few sprigs coriander leaves
  • salt and chilli powder to taste

How to Make Mutton with Curds

  • Grind onions, garlic and ginger to a paste. Soak mutton in curd for 1 hour.
  • Heat 5 tbsps. mustard oil and fry the ground paste nicely.
  • Put in the mutton, salt and all the spices with the exception of garam masala and cook till the mixture turns dry and a rich red colour.
  • Put 1 1/2 cups hot water and cook over a slow fire till the mutton is tender and completely dry. Fry till the oil floats to the top.
  • Sprinkle garam masala and coriander leaves on top before serving.
