  • 2 - carrots, chopped finely
  • 1 - big potato, cubed as small pieces
  • 1 tbsp - Olive oil
  • 1/2 cup - Milk
  • To taste - salt
  • 2 tbsp - dry Parsley leaves
  • 1/4 tsp - pepper powder
  • How to Make MW Herbed Potato and Carrot Soup:

    1. Heat the olive oil, along with chopped carrots, cubed potatoes, parsley leaves and salt in a microwave bowl, in microwave oven for 15 minutes in high (stir thrice in between).
    2. Add half a cup of water to the cooked vegetables and cook again for 5 minutes in high again.
    3. Blend the soup with a hand blender, along with milk and pepper powder. Also add salt, if needed.
    4. Serve warm, with toasted bread slices.
