Ingredients

  • 1 kg - meat, cut into large pieces
  • 1/2 kg - rice, parboiled
  • 4 large sliced Onions
  • 500 gms - Ghee
  • 2 cups - beaten Yoghurt (curd)
  • 1 large whole Garlic pod
  • 2 Ginger ground salt
  • 3 tsp - chilli powder
  • 3 tsp - coriander powder
  • 2 inches of Cinnamon stick
  • 1/2 tsp - peppercorns
  • For seasoning:
  • 4 Bay Leaves
  • 6 Cardamoms
  • 6 Cloves
  • 2 inches of long Cinnamon stick
  • 1/2 tsp - peppercorns
  • How to Make Noorjehani Biryani:

    1. Heat ghee and fry the seasoning items till brown.
    2. Then add onions and brown well.
    3. Put in meat, ginger and garlic and brown well.
    4. Add salt, chilli and coriander powder.
    5. Fry again for 5 mins.
    6. Add 2-3 cups of hot water.
    7. Simmer till meat is tender.
    8. Add in curd and fry again till thick masala is formed.
    9. Remove half the masala.
    10. Put layer of rice in pan.
    11. Spread removed masala on top.
    12. Keep pan on griddle.
    13. Cook on a low fire for about half an hour.
    14. Serve hot with raitha.
