Ingredients

  • 1 kg - meat, cut into large pieces
  • 1/2 kg - rice, parboiled
  • 4 large sliced Onions
  • 500 gms - Ghee
  • 2 cups - beaten Yoghurt (curd)
  • 1 large whole Garlic pod
  • 2 Ginger ground salt
  • 3 tsp - chilli powder
  • 3 tsp - coriander powder
  • 2 inches of Cinnamon stick
  • 1/2 tsp - peppercorns
  • For seasoning:
  • 4 Bay Leaves
  • 6 Cardamoms
  • 6 Cloves
  • 2 inches of long Cinnamon stick
  • 1/2 tsp - peppercorns

How to Make Noorjehani Biryani

  • Heat ghee and fry the seasoning items till brown.
  • Then add onions and brown well.
  • Put in meat, ginger and garlic and brown well.
  • Add salt, chilli and coriander powder.
  • Fry again for 5 mins.
  • Add 2-3 cups of hot water.
  • Simmer till meat is tender.
  • Add in curd and fry again till thick masala is formed.
  • Remove half the masala.
  • Put layer of rice in pan.
  • Spread removed masala on top.
  • Keep pan on griddle.
  • Cook on a low fire for about half an hour.
  • Serve hot with raitha.
