Ingredients

  • 1 cup - red gram dal
  • 200 g - okra/ladies finger
  • A fistful - pearl onion
  • 2 - tomato
  • lemon size - tamarind
  • 2 flakes - garlic
  • 2 - green chillies
  • 1 - capsicum (small)
  • 2 - red chilly
  • 1 tbsp - red chili powder
  • 2 tbsps - coriander powder
  • 1 tsp - turmeric powder
  • 1 tbsp - sambar powder
  • 1 tbsp - grated/shredded coconut
  • 1 tsp - mustard
  • 1 tsp - cumin seed
  • 1 tsp - black gram dal
  • a pinch - asafoetida
  • small quantity - curry leaves
  • small quantity - coriander leaves
  • salt to taste
  • 1 tbsp - ghee
  • oil for frying

How to Make Okra Ladies finger Sambar

  • Wash and cut okra into small cubes and boil it with a little salt.
  • Wash and keep red gram dal in a pressure cooker adding 3 cups of water, little turmeric powder, asafoetida and a drop of oil.
  • Boil it for some 20 minutes.
  • In the meantime, soak tamarind in hot water and make a paste after removing the dust particles.
  • Chop onion after peeling off the skin, chop tomatoes and keep it aside.
  • Cut green chillies and keep other ingredients ready.
  • Heat oil in a pan/kadai, splutter mustard seeds, cumin seeds, black gram dal, red chillies, green chillies and curry leaves.
  • Then add chopped onions, tomatoes, capsicum and fry them well.
  • Add red chilli powder, coriander powder, turmeric powder, sambar powder and the boiled vegetables.
  • Make tamarind paste and mix well.
  • Let it boil for some 10 minutes.
  • Grind coconut, cumin seeds, 2 pearl onions and curry leaves to a paste.
  • Now add boiled dal to the mixture.
  • Finally add the coconut paste, a tbsp of ghee, coriander leaves and mix them well and let it boil till sambar becomes thick.
