How to Make Okra Tomato Gravy

  • Heat the gingili oil in a kadai, add the mustard seeds, fenugreek seeds, urad dal and let them splutter.
  • Add the whole shallots, curry leaves, garlic cloves and stir fry until the shallots turn translucent.
  • Add the okra pieces and stir for a few minutes.
  • Add the tamarind juice, pureed tomatoes with pepper powder, cumin seed powder, coriander powder, red chilli powder and salt.
  • Bring the gravy to a boil and cook until the oil separates. Take off heat.
  • Serve hot with rice and papads.
