  • 6 - eggs
  • 6 slices - bread
  • 3 tbsp - oil
  • 2 tbsp - Butter
  • salt and pepper to taste
  • How to Make One Eyed Jack:

    1. Make a hole in the centre of each slice of bread.
    2. Butter the bread lightly on both sides.
    3. Heat 1 tbsp of oil in a pan and shake the pan so that the oil spreads.
    4. Place 2 slices of bread in the pan, and toast lightly.
    5. Turn the slices over and toast slightly.
    6. Break an egg in the hole in each of the slices of bread.
    7. Cook till the yolk gets firm.
    8. Turn over and fry for a few seconds if desired or leave it sunny side up.
    9. Season it with pepper and salt.
    10. Toast the other 4 slices of bread in this way.
    11. Serve with fried bacon and grilled tomatoes.
