Ingredients

  • 6 - eggs
  • 6 slices - bread
  • 3 tbsp - oil
  • 2 tbsp - Butter
  • salt and pepper to taste

How to Make One Eyed Jack

  • Make a hole in the centre of each slice of bread.
  • Butter the bread lightly on both sides.
  • Heat 1 tbsp of oil in a pan and shake the pan so that the oil spreads.
  • Place 2 slices of bread in the pan, and toast lightly.
  • Turn the slices over and toast slightly.
  • Break an egg in the hole in each of the slices of bread.
  • Cook till the yolk gets firm.
  • Turn over and fry for a few seconds if desired or leave it sunny side up.
  • Season it with pepper and salt.
  • Toast the other 4 slices of bread in this way.
  • Serve with fried bacon and grilled tomatoes.
