  • 1 litre - whole Milk
  • 60 ml - Orange juice
  • 150 g - Sugar
  • 2 tbsp - Orange rind
  • 4 to 5 drops - Orange essence
  • 2 tbsp - unsalted Butter
  • How to Make Orange Fudge:

    1. Mix milk, sugar and butter in a heavy pan. Bring it to a boil and cook to reduce it to 200 ml approximately.
    2. Add juice, stir and cook further for 5-7 mins. Cool mixture till it is warm.
    3. Add essence, colour and beat to a grainy texture.
    4. Fold in rind, leaving some for garnishing.
    5. Set in a greased, flat-bottom tray.
    6. Sprinkle the remaining rind on top. Press rind down gently.
    7. Set for 1 hour, mark and cut into 1-inch cubes.
    8. Serve or store in an airtight container.
    9. Refrigerate if you are keeping for over 2 days.
