Ingredients

  • 1 cup - Orange juice
  • 1 cup - Grapefruit juice
  • 1 tbsp - Lemon juice
  • 1 cup - granulated Sugar
  • 2 cups - water
  • 1 tsp - Lemon rind, finely grated
  • 1 tbsp - or more icing Sugar as required
  • How to Make Orange-Grapefruit Sorbet:

    1. Check that there are no seeds in the juices, strain if required.
    2. Boil sugar and water, without stirring, till it starts boiling.
    3. Reduce heat, simmer for 5 minutes.
    4. Remove from fire; allow to cool to room temperature.
    5. Mix in lemon rind, lemon juice, orange juice and grapefruit juice.
    6. Check for sweetness, add icing sugar as required after tasting mixture.
    7. Set mixture in covered container in freezer, till softly set.
    8. Remove from freezer, beat till smooth, but do not allow to melt.
    9. Return to container, refreeze.
    10. Beat again, and return to freezer, till well set.
    11. Serve in scoops, garnishing with candied lemon and orange peels, or mint sprigs.
    12. Variations: Can make only orange or only grapefruit sorbets.
