1 litre - whole

How to Make Orange Sandesh
Put milk to heat till it come to a rolling boil.
Mix water and vinegar. Pour into boiling milk and reduce heat.
Stir till milk curdles well.
Take off fire and pour into a muslin bag or cloth.
Hold residue in cloth, like a pouch, under running tap water.
This will wash off smell of vinegar.
Press out excess water gently and transfer back to vessel.
Add sugar and heat on low, stirring gently.
When sugar melts, take off fire and cool a little.
Run in a small mixie with colour, tang and essence till smooth.
Break orange into tiny segments and mix into cheesy mixture.
Allow to chill for 1 hour or till it becomes stiff enough to mould.
Shape with hand or in moulds till well set and chilled.
Remove carefully and serve cold.
