Ingredients

  • 8 tbsps - Sweet Potato flour
  • 2 cups - water
  • 1 tbsp - finely chopped Garlic
  • 1/2 cup - chopped mixed vegetables
  • 15 - fresh baby Oysters
  • 1 tsp - fish sauce
  • 3 - eggs
  • 1 bunch - chopped coriander (garnish)
  • Chillies - 4 for garnishing
  • Chilli/garlic sauce - 1 tsp (dipping)
  • How to Make Oysters in Egg Omelette:

    1. Dissolve flour in water and mix well.
    2. Fry garlic in oil and stir in dissolved flour. Continue to stir until it hardens and turns a little brown.
    3. Add in the eggs and scramble.
    4. Add the vegetables, fish sauce and oysters. Cook for a couple of minutes.
    5. Garnish with coriander and chillies. Serve with chilli or garlic sauce for dipping.
