Ingredients

  • Full-fat Milk – 2 litres
  • Payasam Rice – 1 cup (approx 185 grams)
  • Brown Sugar – 2 cups (approx 440 grams)
  • Cashew Nuts – 20 nos
  • Raisins – 10 nos (optional)
  • Cardamom Powder – ½ tsp (seeds of about 10 nos )
  • Ghee – 1 tbsp

How to Make Paal Payasam with Brown Sugar

  • Wash rice well and drain out the water
  • Boil milk in a deep bottomed pan and once boiled, simmer till it reduces to ½ its volume. Takes about 45 minutes.
  • Stir occasionally to prevent it from sticking at the bottom or burning.
  • Add rice and cook till soft and gooey (often referred to as sticky, soft and sweet). About 25 mins; stir occasionally to prevent from sticking at the bottom.
  • Meanwhile, heat ghee in a pan, stir in the cashew nuts and raisins separately.
  • Once most of the milk has been absorbed and the rice has become soft, add the sugar and cardamom powder and stir it for another 10 mins till the sugar is well dissolved and absorbed.
  • Remove from fire, serve hot garnished with roasted raisins and cashew nuts.
