How to Make Pancakes with Spinach and Cheese

  • Mix the rice flour with salt in a vessel.
  • Make a well in the middle, add the eggs and milk, beat the mixture until smooth.
  • Beat and break all the lumps, until bubbles appear.
  • Keep the batter aside.
  • For the filling:
  • Wash spinach, add salt and water and keep on the flame for 10-15 mins.
  • Drain well, cut and keep aside.
  • Melt butter in a saucepan. Add salt, pepper, milk, cream and flour.
  • Stir till the sauce thickens.
  • Then add cooked spinach and grated cheese.
  • Keep on the flame till the cheese melts.
  • Make the pancakes, spread the filling and fold.
