Ingredients

  • 2 cups - plain flour
  • 1 cup - castor Sugar
  • 4 - eggs
  • 1.5 cups - Coconut Milk
  • 1/2 tsp - baking powder
  • 3 - screw pine leaves
  • Green food colouring
  • For topping:
  • 2 tbsp - Sugar
  • 1/2 bowl - water
  • 2 tbsp - toasted sesame seeds
  • How to Make Pandan sesame cake:

    1. Sieve flour together with baking powder. Beat eggs and sugar until light and fluffy.
    2. Extract juice from the screw pine leaves, adding a bit of water.
    3. Fold in the flour and coconut milk alternatively into the egg mixture until it is well blended.
    4. Add in the screw pine juice and food colouring.
    5. Use chiffon size cake pan and grease the pan with butter.
    6. Bake in the oven at 200 C for 35-40 minutes or until the cake is done.
    7. For topping:
    8. Boil together sugar with water until the syrup thickens.
    9. Brush the syrup on the cake and sprinkle it with sesame seeds.
    10. Leave the cake to cool before cutting.
