  • 3/4 cup - Tuvar dal
  • 1/2 cup - Bengal Gram dal
  • 1/2 cup - Urad Dal
  • 3 to 4 - Red Chillies
  • 1/4 tsp - Asafoetida powder
  • 1/2 tsp - cumin (jeeragam)
  • Fresh Ginger - a small piece
  • Curry leaves - a few
  • 1 tsp - salt or as per taste
  • Oil for Deep Fried
  • How to Make Pandigai (Festival) Vadai:

    1. Soak all the three dals in water for about 2 hours.
    2. Wash and drain the water completely.
    3. Put it in a mixie along with red chillies, asafoetida powder and salt.
    4. Grind it to a coarse paste.
    5. Chop ginger and curry leaves finely.
    6. Add it to the dal paste along with cumin (jeeragam). Mix well.
    7. Heat oil in a kadai.
    8. Ensure to keep the stove in medium flame.
    9. Take a lemon size dal paste and flatten it round.
    10. Make a hole in the centre and put it in the hot oil and fry till it becomes light brown.
