Ingredients

  • 200 g - paneer, grated
  • 1/2 cup - Sugar
  • 1/2 cup - Sugar
  • 8 slices - bread
  • 1/2 tsp - Cardamom powder
  • Ghee
  • For Rabri:
  • 3 cup - Milk
  • 25 g - plain khova, crumbled
  • 1/2 tsp - Cardamom powder
  • 1 tbsp - almonds, peeled and shredded
  • 1 tbsp - pistachio, shredded
  • Saffron a pinch
  • Sugar to taste

How to Make Paneer Sandwich with Rabri

  • Mix paneer with sugar, sprinkle with 2 tbsp of water.
  • Cook stirring on low flame till sugar melts and the mixture becomes a soft lump.
  • Add cardamom powder.
  • Trim the sides of bread slices.
  • Sandwich the slices with paneer filling.
  • Apply ghee on both sides of sandwiches and grill in a sandwich toaster till golden brown.
  • Mix half a cup of sugar with half a cup of water.
  • Cook stirring over low heat till the sugar is dissolved.
  • Simmer gently for 2 mins.
  • Arrange the sandwiches on a serving plate and pour the syrup on them.
  • For rabri:
  • Boil the milk and simmer till it is reduced to 2 cups.
  • Add the khova and sugar.
  • Cook for 2 mins.
  • Add cardamom powder and saffron.
  • Serve the sandwiches topped with rabri, garnished with almond and pistachio.
