Ingredients

  • 200 g - low cal paneer
  • 500 g - brinjals
  • 2 tsp - coriander seeds
  • 2 tsp - channa dal
  • 2 tsp - urad dal
  • 5 - dry red chillies
  • 1 tsp - mustard seeds
  • Salt to taste
  • Oil

How to Make Paneer Stuffed Brinjal

  • Slit the brinjals, leaving the stems intact.
  • Roast channa dal, urad dal, red chillies and coriander seeds.
  • Grind them and make a coarse powder.
  • Mix the powder with salt and grated paneer.
  • Stuff brinjals with the mixture.
  • Heat oil, add mustard and let it splutter.
  • Add brinjals and shallow fry.
  • Serve hot with rice or roti.
