Ingredients

  • 2 eggs.
  • 1/2 cup - diced potatoes.
  • 1 tbsp - finely chopped onion.
  • Salt as per taste.
  • pepper as per taste.
  • 2 tbsp - chopped coriander leaves.
  • 2 green chillies, finely chopped.
  • 1 tsp - Cumin seeds powder.
  • oil for shallow frying.
  • How to Make Parsi Style Omelette:

    1. Partboil potatoes, drain and shallow. Fry potatoes till golden brown. Drain and keep aside.
    2. Separate the yolks of egg. Beat the whites till frothy. Add yolk and continue beating.
    3. Add remaining ingredients including potatoes. Mix it well.
    4. Heat the griddle. Put some oil in it. Pour half of egg mixture. Cook till the omelette is golden brown.
