Ingredients

  • 2 cups - Whole Wheat pasta, cooked according to the packet
  • 1 cup - Roasted peanuts, skinned and ground
  • 1 cup - Mixed veggies, chopped small ( carrots, cauliflower, peas, Corn )
  • 5 - Tomatoes, pureed
  • 5-6 - Cloves of garlic, minced
  • 1 tsp - Oil
  • 2 tsp - Cream
  • 2 tsp - Salt
  • 2 tsp -Oregano
  • 2 tsp - Black pepper
  • 2 - Green chillies, chopped fine
  • 1 tsp - Green Basil pesto
  • 2 tsp - Grated cheese
  • How to Make Pasta in Peanut Sauce:

    1. Heat oil in a pan and add minced garlic and green chillies, fry for a minute.
    2. Add tomato puree and salt, cook covered for 3-4 minutes until it turns thick.
    3. Meanwhile, steam or boil the vegetables till they are a little tender but not mushy.
    4. Add them to the tomato sauce, stir well and cook covered for 4-5 minutes.
    5. Keep stirring in between.
    6. Add pesto and spices, cook for another 2-3 minutes.
    7. Now, add roasted peanut powder to this and keep stirring for 2 minutes.
    8. Add pasta and cream, mix well.
    9. Drizzle some cheese over the top before serving.
