Ingredients

  • 225 g - White bread flour
  • 115 ml - Warm water
  • 25 g - Butter melted
  • 25 g - Brown sugar
  • 1/2 tsp - Salt
  • 1 tsp - Dried Yeast
  • For the filling:
  • 40 g - Brown sugar
  • 1 tbsp - Corn flour
  • 140 g - Mascarpone cheese
  • 150 g - Curd cheese
  • 2 - Eggs, lightly beaten
  • 1 tsp - Vanilla extract
  • 2 tbsp - Apricot jam or Strawberry jam
  • 9 - Peaches halved and stoned.
  • How to Make Peach and Vanilla slices:

    1. Mix the flour, salt, sugar and yeast.
    2. Add the melted butter, lightly beaten eggs and warm water and knead it to make a smooth dough.
    3. Place the dough in a clean bowl, cover it with cling film and leave it in a warm place to rise for about 1 hour or until double in size.
    4. When the dough has risen, punch the air back, roll it out into a rectangle to fit a 23 cm square cake tin.
    5. Place the rolled out dough in the tin and cover it with a cling film.
    6. Preheat the oven to 200 degree Celsius.
    7. Now make the filling by mixing sugar and corn flour in a small bowl.
    8. Put the mascarpone and curd cheese in a large bowl and beat in the sugar mixture.
    9. Now add the eggs and vanilla extract.
    10. Spread the apricot jam on top of the bread and pour the filling on top of the jam.
    11. Now arrange the peach slices on top of the cheese mixture.
    12. Bake in the preheated oven for 20 to 25 minutes or until the filling sets and is brown.
    13. Let it cool slightly before cutting into slices.
    14. Serve warm with tea.
