How to Make Peach Melba Fool

  • Reserving a few slices of peaches to serve, blend the remaining peach, cranberry and 1/2 tbsp of icing sugar in a blender.
  • Whip the cream with the remaining icing sugar until soft peaks form.
  • Fold the crushed biscuits and half of the fruit puree into the cream to form a ripple effect, do not mix the puree completely.
  • Pour the remaining fruit puree in individual serving glasses or dessert bowl, top it up with the cream mixture and place the slices of fruits on top.
  • Chill in the fridge for minimum of 4 to 5 hours before serving.
