Ingredients

  • 200 gms - canned Peaches
  • 10 - amaretti biscuits
  • 100 gms - cranberries, Raspberries or strawberries
  • 200 ml - light Cream
  • 1 tbsp - icing Sugar
  • How to Make Peach Melba Fool:

    1. Reserving a few slices of peaches to serve, blend the remaining peach, cranberry and 1/2 tbsp of icing sugar in a blender.
    2. Whip the cream with the remaining icing sugar until soft peaks form.
    3. Fold the crushed biscuits and half of the fruit puree into the cream to form a ripple effect, do not mix the puree completely.
    4. Pour the remaining fruit puree in individual serving glasses or dessert bowl, top it up with the cream mixture and place the slices of fruits on top.
    5. Chill in the fridge for minimum of 4 to 5 hours before serving.
