  • Chicken stock - 4 cup
  • Chicken breast - 1 cup, finely chopped
  • roasted Peanuts (unsalted) - ½ cup
  • Peanut oil - 2 tbsp
  • Onion - 1 cup, chopped
  • Celery - ½ cup, chopped
  • pepper to taste
  • salt to taste

How to Make Peanut and chicken soup

  • Powder the peanuts.
  • Heat oil in a pan, add onion and celery and saute till the vegetables are soft.
  • Remove the pan from heat.
  • Add the ground peanuts and 1 cup of stock.
  • Blend this mixture till very smooth.
  • Return the blended mixture to the pan.
  • Add remaining stock and chicken.
  • Add salt and pepper to taste.
  • Simmer the soup gently till the chicken is cooked.
  • Taste and correct the seasoning and serve the soup hot.
