Ingredients

  • Chicken stock - 4 cup
  • Chicken breast - 1 cup, finely chopped
  • roasted Peanuts (unsalted) - ½ cup
  • Peanut oil - 2 tbsp
  • Onion - 1 cup, chopped
  • Celery - ½ cup, chopped
  • pepper to taste
  • salt to taste
  • How to Make Peanut and chicken soup:

    1. Powder the peanuts.
    2. Heat oil in a pan, add onion and celery and saute till the vegetables are soft.
    3. Remove the pan from heat.
    4. Add the ground peanuts and 1 cup of stock.
    5. Blend this mixture till very smooth.
    6. Return the blended mixture to the pan.
    7. Add remaining stock and chicken.
    8. Add salt and pepper to taste.
    9. Simmer the soup gently till the chicken is cooked.
    10. Taste and correct the seasoning and serve the soup hot.
