Ingredients

  • 175 gms. long grain Rice
  • 1 red pepper
  • 2 tsp. Vinegar
  • 225 gms. frozen peas
  • 150 ml. single Cream
  • Pinch of grated Nutmeg
  • Salt and pepper

How to Make Pepper and Rice Salad

  • Cook rice in boiling, salted water until just tender (about 12 minutes).
  • Drain and rinse with cold water, leave to drain again.
  • Chop pepper discarding seeds, core and stalk.
  • Cook peas in boiling salted water for 4 minutes.
  • Add chopped pepper and cook for a further 5 minutes.
  • Drain and rinse with cold water, drain well again.
  • Mix rice, peas and pepper in a bowl. Pour over cream and vinegar.
  • Season with nutmeg, salt and pepper and mix lightly.
