Ingredients

  • 1 cup - Basmati rice.
  • 1 - green/ Red/Yellow/Orange pepper, medium, cut into thin long pieces.
  • 1 - Onion, medium, cut into thin long slices.
  • 1 tsp - Cumin seeds (jeera).
  • 1 tbsp - Cooking oil (can be vegetable/canola/ even olive oil).
  • 1/2 - 3/4 tsp - chilli powder.
  • Salt to taste.

How to Make pepper-Onion rice

  • Wash the rice well and boil it with two cups of water. Reduce heat to medium / low flame and cover and cook until done (about 10 minutes).
  • Then, heat the oil in a heavy-bottomed wok and crackle the cumin seeds and then add onions and fry until it becomes transparent.
  • Add pepper and fry another 2-4 minutes on high heat.
  • Add salt just enough for the vegetables and mix well.
  • Add the cooked (separated) rice to the vegetables and mix well.
  • Add chilli powder and salt to taste and mix well.
  • Can also add about half a cup of cooked sweet corn or pomegranate seeds finally to make the rice look colourful.
