Ingredients

  • 1 cup - carrots
  • 1 cup - cabbage
  • 1 cup - beans (all finely chopped)
  • 1 cup - corn and Peas
  • 1/2 cup - moong dal
  • 1 tsp - urad dal
  • Mustard
  • 3-4 - green chillies
  • 1/2 cup - grated coconut
  • 1-2 tbsp - oil
  • A pinch of Turmeric powder
  • Salt, to taste
  • A sprig of cilantro leaves

How to Make Peppered Mixed Vegetable Curry

  • Take oil in a thick bottomed pan and add mustard and urad dal.
  • When the mustard splutters add the cut vegetables, moong dal, peas and corn. Add salt to taste.
  • Add two cups of water - enough to cover the vegetables. Mix well and cover with plate.
  • When the vegetables are well-cooked, set aside.
  • Now blend cilantro leaves, green chillies and grated coconut and add to the vegetables.
  • Mix well and serve.
