Add to lemon juice and pineapple syrup. Pour into six moulds and chill till set.
In a serving platter, spread lettuce shreds. Arrange six pineapple rings on this.
Put the paneer shreds in the centre.
Unmould each pineapple mould over each pile and decorate with coriander leaves.
