Ingredients

  • 1/2 kg - Lauki (green gourd / doodhi); peeled and cut into 1-inch cubes
  • 2 - Tomatoes, medium sized, chopped fine
  • 3 tsp - Oil
  • 1 tsp - Cumin seeds (jeera)
  • 3 leaves - Bay Leaves (tez patta)
  • 1 pinch - Asafoetida (hing)
  • Salt - As per taste
  • 1/4 tsp - Turmeric powder (haldi)
  • 1.5 tsp - Coriander powder (dhaniya powder)
  • 1/2 tsp - Cumin powder (Jeera powder)
  • 1/2 tsp - Red Chilli powder (mirchi powder)
  • Green Coriander leaves (dhaniya patti), chopped fine for garnishing
  • How to Make Plain Lauki-Tamatar Subzi:

    1. In a pressure cooker heat oil, add asafetida, jeera and bay leaf. Add chopped tomatoes and fry them till they are soft/wilted.
    2. Add the lauki pieces.
    3. Add salt and other masala powders.
    4. Mix well and close the lid of the cooker.
    5. Take off the fire after 3 whistles.
    6. Garnish with fresh coriander.
    7. Serve with Rotis or Parathas.
