  • 1/2 litre milk.
  • 25 g - each of blanched and sliced almonds and pistachios.
  • 1 tbsp - each of charoli and melon seeds.
  • 25 g - raisins.
  • 1/4 tsp - essence of saffron.
  • a few drops of yellow food colouring.
  • silver foil.
  • 1 tsp - cardamom powder.
  • 4 tbsps. sugar.

How to Make Plain Payesh

  • Fry all the nuts and raisins.
  • Put milk and sugar together over a slow fire and cook till the milk is reduced to one-fourths its original quantity.
  • Remove from fire and mix all the above ingredients.
  • Cover with foil and serve either hot or cold.
