How to Make Plain Pumpkin Gojju

  • Grind the almonds and fried chana into a fine powder.
  • Heat a tsp of oil in a pan and fry the ingredients in the following order - chana dal, urad dal, methi, sesame seeds and finally green chillies. Grind this mixture into a fine powder.
  • Now mix both the dry powders along with water, coriander leaves, ginger, turmeric, tamarind and brown sugar into a fine paste.
  • Cut the pumpkin into small cubes (of about 1.5 cm) and cook with salt on stove. It should be cooked just right for about 10 minutes otherwise it becomes mushy.
  • Add paste to pumpkin and bring to a boil.
  • The gravy should be of the consistency of pasta sauce or dosa batter.
