Ingredients

  • Fresh Spinach leaves - 2 cups, washed and chopped
  • Eggplant - 5 small, washed and cut
  • Gram - 1/2 cup, washed and soaked in water for half an hour
  • Tomatoes - 2, chopped (you may also use 3 tsp Tomato paste)
  • Vegetable oil - 2 tsp
  • Salt - as per taste
  • Coriander powder - 1/2 tsp
  • Chilli powder - 1/2 tsp
  • How to Make Plain Sai Bhaji:

    1. Heat oil in a pressure cooker.
    2. Add coriander and chilli powder to it. Stir for a minute.
    3. Add tomatoes, stir for a while and add rest of the ingredients. Close the cooker.
    4. Cook for one whistle on high flame.
    5. Take off the stove and wait for 10-12 minutes for it to cool.
    6. Serve with puri, chapatti or rice.
