Ingredients

  • 3 cups - cooked chicken, roughly chopped
  • 1 tbsp - Butter
  • 1 - onion, finely chopped
  • 1 - carrot, finely chopped
  • 1/2 - capsicum, finely chopped
  • 2 sticks - celery, finely sliced
  • 2 tbsp - Corn flour
  • 1 tbsp - soya sauce
  • 1 tbsp - Brown sugar
  • 1 cup - Pineapple juice
  • 1 cup - water
  • 2 - Chicken stock cubes
  • salt and pepper to taste
  • How to Make Plain Sweet and Sour Chicken:

    1. Place butter and vegetables in a 2-litre casserole dish.
    2. Cook, covered on high 4-6 mins.
    3. Blend together corn flour, soya sauce, brown sugar, pineapple juice, water, stock cubes, salt and pepper.
    4. Add to the vegetables and cook on medium for 12-14 mins.
    5. Stir in chicken.
    6. Heat on high for 1-2 mins.
    7. Serve with rice.
