  • 1/2 cup - unsalted Butter, at room temperature (or use salted Butter and omit salt)
  • 1/2 cup - light Brown sugar
  • 1/2 cup - white Sugar
  • 1 - large Egg
  • 1 tsp - vanilla extract
  • 1.25 cup - all - purpose flour
  • 1/2 tsp - baking powder
  • 1/2 tsp - baking soda
  • 1/4 tsp - salt
  • 1 cup - old fashioned Oats (or 1/2 cup - Oats and 1/2 cup - Corn flakes)
  • 1 cup - white chocolate chunks
  • 1 cup - Pomegranate arils
  • How to Make Pomegranate White Chocolate Chunk Cookies:

    1. Preheat the oven to 180 degree C. Line a large baking sheet, with parchment paper or a silicone baking mat and set aside.
    2. Cream butter and sugar together, until smooth.
    3. Add the egg, vanilla extract and mix, until well combined.
    4. In a separate bowl, whisk together flour, baking powder, baking soda and salt.
    5. Slowly add flour mixture to the wet ingredients. Mix, until just incorporated.
    6. Stir in the oats and white chocolate chunks. Make lemon sized dough balls.
    7. Tuck about 6-8 pomegranate arils, in each cookie dough ball. Make sure you don't squish the pomegranate or else there will be a discolouration.
    8. Bake the cookies for 10-12 minutes, until the cookies are golden brown.
    9. Remove from oven and let it cool on a baking sheet for two minutes.
    10. Transfer to a wire rack to finish cooling.
