Ingredients

  • 250 gm - french /green beans, chopped
  • 3 - potatoes, cubed or cut lengthwise
  • 2 - tomatoes, chopped
  • 4-5 - Garlic cloves, chopped
  • 2 tsp - ginger, grated
  • 4 - green chillies, chopped
  • 1 pinch - asefetida
  • 1 tsp - Cumin seeds
  • 1 tsp - coriander powder
  • 1 tsp - Garam Masala
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - red chilly powder
  • salt o taste
  • vegetable oil for frying
  • How to Make Potato & Green Beans Stir Fry:

    1. Heat oil in a wok, fry the potato cubes till it becomes golden brown from both sides.
    2. Drain on paper towel and set it aside.
    3. Remove all the oil from wok remaining around 3 tbsp, add asafoetida and cumin seeds.
    4. Saute for a minute.
    5. Add ginger and garlic, stir for 2 minutes.
    6. Add all spices and salt followed by chopped tomatoes and chillies.
    7. Mix well and cook for 2 minutes.
    8. Add chopped beans, stir and cook for 7-10 minutes on low heat, stirring frequently.
    9. Do not add any water.
    10. Add fried potatoes and mix well.
    11. Cook for 2 more minutes.
    12. Remove from heat and serve hot with chapatti.
