Ingredients

  • 12 - Lettuce leaves
  • 1 - big Potato (boiled and chopped)
  • 1 - Spring onion (finely chopped)
  • 1 tbsp - fresh Mint (finely chopped)
  • 1 tbsp - fresh coriander (chopped)
  • 50 g - Paneer
  • 1 tsp - Honey
  • 2 tsp - hung Yoghurt
  • Salt and pepper to taste
  • 3/4 cup - grated cheese
  • How to Make Potato and cheese lettuce rolls:

    1. Put lettuce leaves in a bowl and pour boiling water over them to cover fully.
    2. Stand for 1 minute, drain and rinse leaves in iced water. Drain on absorbent paper.
    3. Combine onion, mint, coriander, paneer, honey and yoghurt in a bowl.
    4. Stir in potato. Season with salt and pepper.
    5. Divide mixture between leaves, fold in the sides and roll up tightly to enclose filling.
    6. Put rolls on a greased tray, sprinkle with cheese and bake at 180 degree C till the cheese melts.
    7. Serve with toast and soup.
