  • Cucumber - 2.
  • Potato - 3 (medium or 1 large).
  • Toor Dal - 1/2 cups.
  • Desiccated Coconut - 3/4 cup.
  • Green chilli - 5.
  • Channa dal - 1 tbsp.
  • Urad Dal - 1/2 tbsp.
  • Curry leaves - A few sprigs.
  • Jeera - 1/2 tbsp.
  • Salt - To taste.
  • How to Make Potato and Cucumber Kootu:

    1. Peel and cut the cucumber, potato into medium pieces.
    2. Take a wok and add the veggies with just enough water for it to cook.
    3. Add turmeric and channa dal.
    4. Allow it to cook well.
    5. Grind coconut, urad dal, jeera and green chilli into fine paste and set aside.
    6. Pressure cook the Toor dal.
    7. When the vegetables are done, add cooked tuvar dal, coconut paste, salt and mix well.
    8. Now keep in it on simmer so that vegetables and gravy mix well.
    9. When done, add seasoning of mustard and urad dal toasted in oil.
    10. Finally put the curry leaves.
    11. Garnish with a little coconut oil.
    12. Serve with lootu or rice.
