Potato brinjal stir fry is a vegetarian Indian dish popularly relished in Bengal. The combination of potato and brinjal is delicious and that is why this recipe is the favorite comfort food of many.

The recipe involves easy stir-fry technique. You can also learn to make this simple yet delicious recipe at home by following our recipe guide. Brinjals are fried with potato till both are soft and well cooked. The addition of spices and condiments enhance the flavor further to make this crisp recipe. It is best relished with roti or naan.


  • 1 cup - peeled potatoes, cut into long strips or small pieces
  • 1 cup - Brinjal, cut into long strips or small pieces
  • 1/4 cup - Onions, Sliced
  • 1 tsp - Red Chilli powder
  • A pinch of Turmeric powder
  • A few Curry leaves
  • Salt
  • 1 tsp - Oil
  • 1/2 tsp - Mustard Seeds
  • 1/4 tsp - Cumin seeds
  • 1/2 tsp - Bengal Gram
  • 1/2 tsp - Black gram
  • How to Make Potato brinjal stir fry:

    1. Heat oil in a non-stick pan and add mustard seeds.
    2. When they pop, add cumin seeds and the dals.
    3. Fry for a while until the dals turn light golden brown in colour.
    4. Then add the curry leaves, potatoes, brinjal, onions and mix well.
    5. Add turmeric powder, chilli powder and salt and mix well.
    6. Cover and allow the vegetables to cook for some time.
    7. Keep on low flame. Saute well and leave on the flame until the vegetables become soft and cooked.
    8. Then transfer the contents to a serving bowl and enjoy with steaming hot rice or chapattis.
