  • 4 potatoes (medium).
  • 4 big carrots.
  • 1 onion (small).
  • 2 tbsp lemon juice.
  • 1/2 tbsp cumin and mustard seeds.
  • 1/2 tbsp turmeric.
  • 2 tbsp chilli powder.
  • 1 tbsp garam masala powder.
  • 15 cashews.
  • 1/2 tbsp ginger-garlic paste.
  • oil for frying.

How to Make Potato-Carrot Fry

  • First, peel the potatoes and carrots. Then, cut them into small pieces.
  • Heat the oil in a heavy saucepan, and then add potato pieces and fry until they turn brown.
  • Repeat the same with the carrot pieces too.
  • When they are done, keep them aside.
  • And now heat 4 tbsp of oil in another pan, and add cumin and mustard seeds. Allow them to splutter, and then add onions, ginger-garlic paste and fry them until they turn brown.
  • Then, add the fried potato pieces, fried carrot pieces, chilli, turmeric, masala powders, lemon juice and cashews and mix well.
  • Cover it for 5 minutes.
  • Garnish it with cilantro and serve with hot rice.
