Ingredients

  • 1 medium head cauliflower
  • 4 medium potatoes
  • 2 medium tomatoes
  • 4 tbsp
  • chopped coriander leaves
  • 2 large onions
  • 1 piece ginger
  • 4 green chillies (adjust to your taste)
  • 1/4 tsp. turmeric
  • 1/2 tsp. red chilli powder (adjust to your taste)
  • 3/4 tsp. coriander powder
  • 3/4 tsp. jeera powder
  • 1/2 tsp. garam masala powder (adjust to your taste)
  • Salt
  • 2 tbsp. oil
  • 1/4 tsp. mustard
  • 1/4 tsp. jeera
  • 1/4 tsp. methi
  • 2 tsp. lemon juice (optional)

How to Make Potato Gobi Fry

  • Cut cauliflower into fairly big florets. Chop onions into fine slices. Mince ginger. Chop tomatoes.
  • Cube potatoes into 1 inch cubes and cook on high for 12 minutes in the microwave, drain and set aside.
  • In the meantime, heat oil, add mustard, jeera and methi and fry till they splutter.
  • Add chillies and ginger, then the onions and fry till onions are pinkish.
  • Wash the cauliflower in hot water, drain and add to the onions and saute for 3 minutes.
  • Add 1/4 cup water, cover and cook on high for 4 minutes.
  • Remove cover, add tomatoes and fry till tomatoes are softened.
  • Add salt and all the masala powders and stir to mix.
  • Then add the potatoes and stir gently (try not to mash the potatoes too much).
  • Heat on low for 2 minutes.
  • Add lemon juice and coriander, stir to mix and serve with chapattis or naan.
