How to Make Potato Soup

  • Slice the onion and potato very thinly. Cook in butter for 5 minutes, stirring all the time.
  • Do not allow the potatoes to brown.
  • Add the milk and the water. Cover and simmer for 30 minutes.
  • Pass the soup through a fine wire.
  • Sieve. Beat egg yolk and add it to the soup.
