Ingredients

  • 10 large prawns, shelled, deveined with tails intact
  • Oil for deep frying
  • For the marinade:
  • 1 egg, beaten
  • 1.5 tsp - ajinomoto
  • 1.5 tsp - white pepper powder
  • 1.5 tsp - Sugar
  • 1 tbsp - sesame seeds
  • 1.5 cup - Corn flour
  • Salt to taste
  • For the Schezwan Sauce:
  • 2 tbsp - chopped Garlic
  • 1.5 cup - Spring onions
  • 1 medium red onion, chopped
  • 2 cups - stock
  • Mix in a bowl:
  • 2 tbsp - Tomato paste
  • 1 tbsp - chilli paste
  • 1.5 tbsp - soya sauce
  • 1 tsp - Sugar
  • 1 tsp - white pepper powder
  • 1 tbsp - Vinegar
  • How to Make Prawn Fettuccine:

    1. Heat oil in a large saucepan, cook the onion, red pepper, garlic, chilli, cumin, and ground coriander for 3-4 minutes or until the onion is soft.
    2. Add tomatoes, vinegar, tomato paste and the chicken stock.
    3. Then cook on a medium heat for 30 minutes until sauce thickens.
    4. Add prawns to mixture and cook for 5 minutes.
    5. Mix in 2 tbsp fresh coriander and season with black pepper.
    6. Spoon sauce over boiled fettuccine and sprinkle the remaining fresh coriander on top.
    7. Serve immediately.
