Ingredients
- 1 kg - large prawns
- 1/2 cup - butter
- 1 - onion
- 1.5 cup - rice
- 1 cup - grated cheese
- 8 cups - stock
- salt
How to Make Creamy Prawn Risotto
- Melt 4 tbsp butter. Add chopped onion and cook till it turns colour.
- Add rice and fry for a couple of minutes.
- Add stock a little at a time and cook the rice.
- Melt 2 tbsp butter and add boiled prawns. Saute. Add to rice.
- Add remaining melted butter and grated cheese.
- Mix well.
