Ingredients

  • 1 kg - large Prawns
  • 1/2 cup - Butter
  • 1 - Onion
  • 1.5 cup - Rice
  • 1 cup - grated cheese
  • 8 cups - stock
  • salt

How to Make Prawn Risotto

  • Melt 4 tbsp butter. Add chopped onion and cook till it turns colour.
  • Add rice and fry for a couple of minutes.
  • Add stock a little at a time and cook the rice.
  • Melt 2 tbsp butter and add boiled prawns. Saute. Add to rice.
  • Add remaining melted butter and grated cheese.
  • Mix well.
