Ingredients

  • 4 - eggs
  • 1.5 cups - powdered Sugar
  • 1 cup - oil
  • 2 cups - yellow pumpkin, cooked and mashed
  • 2 cups - sifted flour
  • 1 tsp - baking powder
  • 1 tsp - baking soda
  • 1 tsp - Cinnamon powder
  • 1/4 tsp - powdered Cloves
  • To serve: dollop of Cream and Orange rind
  • How to Make Pumpkin Bars:

    1. Beat the eggs with the powdered sugar over boiling water till light and fluffy. Take off the fire.
    2. Add 1 cup oil and the cooked and mashed yellow pumpkin beating well.
    3. Sift 2 cups sifted flour together with the baking powder, baking soda, cinnamon powder and powdered cloves.
    4. Fold the flour into the egg and pumpkin mixture.
    5. Bake in an ungreased 15 x 10 inch baking tray at 190 degrees C for about 20-25 mins.
    6. Cool on a wire rack. Cut into bars.
    7. Serve with a dollop of cream and a few bits of orange rind sprinkled on top.
