  • 4 - eggs
  • 1.5 cups - powdered sugar
  • 1 cup - oil
  • 2 cups - yellow pumpkin, cooked and mashed
  • 2 cups - sifted flour
  • 1 tsp - baking powder
  • 1 tsp - baking soda
  • 1 tsp - cinnamon powder
  • 1/4 tsp - powdered cloves
  • To serve: dollop of cream and orange rind

How to Make Pumpkin Bars

  • Beat the eggs with the powdered sugar over boiling water till light and fluffy. Take off the fire.
  • Add 1 cup oil and the cooked and mashed yellow pumpkin beating well.
  • Sift 2 cups sifted flour together with the baking powder, baking soda, cinnamon powder and powdered cloves.
  • Fold the flour into the egg and pumpkin mixture.
  • Bake in an ungreased 15 x 10 inch baking tray at 190 degrees C for about 20-25 mins.
  • Cool on a wire rack. Cut into bars.
  • Serve with a dollop of cream and a few bits of orange rind sprinkled on top.
