Ingredients

  • 2 cups - Pumpkin pulp
  • 2.5 cups - flour
  • 1 tsp - baking power
  • 1/2 tsp - baking soda
  • 1 tsp - Cinnamon powder
  • 1 cup - Sugar
  • 3/4 cup - Butter
  • 1.5 cup - thick sour Curd
  • 3-4 tsp - lukewarm water
  • 3-4 tbsp - Cashew nuts
  • 1 tsp - Orange rind, cut into very fine pieces
  • How to Make Pumpkin Nut Bread:

    1. Peel, deseed and cut the pumpkin into one inch pieces.
    2. Place these on an oven-proof tray and bake in a oven at 180 degree for 20- 25 minutes. Scrape out and mash the flesh.
    3. Combine together the flour, baking soda, baking powder and cinnamon.
    4. In a food processor cream the sugar, butter and the curd.
    5. The batter should be smooth and fluffy
    6. Transfer to a mixing bowl and add the pumpkin pulp and the water, stirring continuously so that no lumps form.
    7. Add the nuts and the orange rind.
    8. Grease a loaf pan.
    9. Pour the mixture into the pan and bake in an oven for about 45-50 minutes at 180 degree till done
    10. Cool and cut into slices and serve.
