Ingredients

  • 1 cup - Pumpkin puree
  • 1.5 cups - Milk
  • 1 - Egg
  • 2 tbsp - oil
  • 2 tbsp - Vinegar
  • 2 cups - all - purpose flour
  • 2-3 tbsp - Sugar
  • 2 tsp - baking powder
  • 1 tsp - baking soda
  • 1 tsp - all spice, ground
  • 1 tsp - ground Cinnamon
  • 1/2 tsp - ground Ginger
  • Salt - a pinch
  • How to Make Pumpkin Pancakes:

    1. Mix the dry ingredients together (flour, sugar, baking powder, spices and salt) and whisk thoroughly.
    2. Mix the wet ingredients (pumpkin puree, milk, oil, egg, vinegar).
    3. Combine the two and mix to ensure that there aren't any dry lumps.
    4. Heat a frying pan, oil it lightly and add 1/4 cup full of batter into it.
    5. Don't spread like a dosa. Cover and cook for a minute.
    6. Once the bubbles start appearing, flip and cook for another minute.
    7. Serve hot with butter and syrup of your choice.
