Ingredients

  • 2.5 cups - chapatti flour
  • 2/3 cup - water
  • Little - ghee, for brushing the bread while rolling out the dough
  • To deep fry - oil
  • How to Make Puri:

    1. Put flour in a large bowl.
    2. Make a well in the middle and pour in a stream of water in the centre.
    3. Use one hand to mix the flour and water continuously until the dough is moist enough to be gathered into a rough mass.
    4. Wet hands and continue kneading until the dough becomes elastic and smooth.
    5. Cover the dough with a wet towel and rest it for 1/2 hour in warm climates and 1.5 hours in cold climates.
    6. Knead the dough a little again.
    7. Make small balls from the dough and cover them with a damp cloth.
    8. Take one ball of dough and dip a corner of the ball in melted ghee or oil and roll it out into 4 to 5 inches round.
    9. Repeat the same process to roll out all pooris.
    10. Heat plenty of oil in a kadai until very hot.
    11. Put in a poori and immediately start flicking hot oil over the top of it with a spatula so that it will swell up like a ball.
    12. This should take only a few seconds.
    13. Flip the poori over and cook the other side until golden brown.
    14. Serve hot with pindi choley or other vegetables.
