  • rice-1 cup
  • oil-2 tsp
  • hing- a pinch
  • mustard seeds-1 tsp
  • Jeera (cumin) - 1 tsp
  • red chillies- 3
  • Green chillies split into half-2
  • turmuric - 1/2 tsp
  • urad dal-1 tsp
  • Chana dal-1 tsp
  • Lemon juice - 2tsp
  • cashew or Peanuts (optional)-1 tsp
  • Curry leaves and coriander chopped for garnishing
  • salt as per taste
  • How to Make Quick Rice Pulihora:

    1. Cook 1 cup basmati or sona masori or any other rice and keep aside.Left over rice can also be used.
    2. In a frying pan put oil and when the oil is warm add hing,turmuric,red chilli pieces,green chillies,urad dal,chana dal,jeera seeds,mustard seeds,curry leaves,cashew/peanuts and let the mustard splutter.
    3. Add the hot mixture to the cooked rice.
    4. Add salt and 2 tsp of lemon juice.
    5. Mix the ingredients with the rice thoroughly and serve hot.Its great by itself,no need of a side dish.
    6. But if you want one, a cup of yoghurt (dahi) is good.
