Ingredients

  • Finely cut Spinach - 1 big bowl
  • Finely cut Onion - 2 tbsps
  • Finely cut Green chillies - 2 tsps
  • Urad Dal - 1 tsp
  • safoetida - 1 pinch
  • Oil or Ghee (clarified butter) - 1 tbsp
  • Indian style yogurt - 2 cups
  • Finely cut coriander - 4 tsps
  • salt to taste
  • How to Make Quick Spinach Raita:

    1. Heat oil in a kadai. Add mustard seeds.
    2. When it splutters, add urad dal and wait till it turns pink.
    3. Add asafoetida and then onions and chillies. Fry for 3 mins and add cut spinach and fry for 5 mins.
    4. Add one cup of water and cook till the water is fully absorbed.
    5. Add salt. Add the mixture to the bowl of yogurt.
    6. Garnish with coriander and serve with chapattis or rice.
