Ingredients

  • 300 g -flour
  • 225 g- unsalted margarine
  • 225 g- powdered Sugar
  • 280 g -evaporated Milk
  • 1 tsp -baking powder
  • 3 tsp -dried Raisins
  • 1 tsp -vanilla essence
  • 4-5 tsp -water
  • How to Make Raisin Cake:

    1. Preheat oven at 180 C. Sieve flour and baking powder. Add to it the dried fruit.
    2. Cream margarine and powdered sugar well.
    3. Add the evaporated milk and vanilla.
    4. Add flour in 3 times, alternating with water.
    5. The batter should not be too watery.
    6. Pour in a greased mould and bake for 10 min.
    7. Reduce temperature to 160 C.
    8. Cover the cake with aluminium foil.
    9. Bake for another 20 min or till cake tests are done.
    10. Leave the cake to cool and then unmold and serve.
