Ingredients

  • 1 cup - basmati rice
  • 3/4 cup - sugar
  • 3 cups - boiling water
  • 1/2 tsp - cardamom powder
  • 1 small piece - cinnamon
  • 1 cup - golden raisins
  • 1/2 cup - pure ghee
  • A little saffron colour dissolved in 2 tsp of water

How to Make Raisin Pilaf

  • Wash and soak basmati rice for 15-20 mins. Heat ghee in a skillet.
  • Drain the rice.
  • Add to ghee, and saute for 5 minutes, till golden colour.
  • Add boiling water to rice.
  • Simmer uncovered till half-done (approx 10 mins).
  • Add raisin and let it cook, till rice is just about but not yet done.
  • Add sugar, cinnamon, cardamom and saffron.
  • Cook till all water dries up.
  • Serve hot.
